Early Days Batch 002
Early Days batch 002 is Box Distillery’s second bottling exclusively for the international market. It is comprised of a blend of peated an unpeated whisky matured in 130-litre casks, which previously contained American bourbon. Early Days Batch 002 is 100% made from classic Pilsner malt, the malt which dominated the beer and whisky industries before modern, more effective barley types were created. Two thirds of the ingoing whisky is smoked and in this case, the malt has been dried over glowing peat from Scotland. Early Days Batch 002 is an exquisitely well-balanced all-round whisky with distinct bourbon character and an impressively young maturity.

33.2 % unpeated Pilsner malt

Early Days Batch 002 is neither chill-filtered nor coloured.
Yeast: Fermentis Safwhisky M-1
Unpeated malt: Pilsner malt from Vikingmalt in Halmstad, Sweden.
Ingoing barley types: Quench, Publican, Henley
Peated malt: Pilsner malt from Castle Maltings in Belgium.
Peated to 45 ppm phenol content using Scottish peat.
Ingoing barley types: Henley, Sebastian
Process water: From Bålsjön, filtered through sand and coal filters
Cooling water: From the River Ångerman
Ingoing batches: 115A-121A, 129B-132A
Batch size: 1.2-ton malt
Average fermenting time: 80 hours in stainless steel washbacks

First cut of the heart:
Unpeated recipe: 13 minutes head (pre-distilled)
Peated recipe: 30 minutes head (pre-distilled)
Second cut of the heart:
Unpeated recipe: 67 % ABV (20°C)
Peated recipe: 60 % ABV (20°C)
The bourbon cask is manufactured by Speyside Cooperage in quarter cask size using 130-140 litres of newly emptied bourbon barrels (200 litre)
Up until October 2014, the cask was stored in a damp warehouse and lost a great deal of its alcohol strength. From October 2014 till April 2016, the cask has been stored in a drier environment in Box warehouse No 3.
On the 4th of April 2016, 1236 kg of whisky with an average alcohol content of 58.9% was added to a blending tank.
Alcohol content was adjusted to 51.5% at the time of bottling.
Early Days Batch 002 was bottled on 6th April 2016 in a batch of 2000 bottles. The remaining whisky was put back into newly emptied quarter casks at 51.5% ABV. The whisky was distributed mainly to France, Germany, Denmark and Australia. The remaining bottles were reserved for fairs, events and tastings.
To allow it to deliver maximum enjoyment, we recommend that Early Days Batch 002 is allowed to breathe in the glass for a time.
Feel free to add a few drops of water to enhance the aromas in the glass.

Rich and warming with sweet vanilla, ripe pears and dry smoke.
