The 2nd Step Collection 02

The second release in the 2nd Step Collection is a light peated mix of bourbon and sherry casks, The main part (52 %) of the ingoing whiskies comes from sherry casks. By this edition we present a little pretaste of our sherrymatured whisky. The oldest ingoing whiksy is more than five years wich adds a soft and mellow character to the palate.

8,15 % is 5,16 years old unpeated whisky from 200-liters 1st fill bourbon cask
31,26 % is 4,72 years (old) unpeated whisky from 115-liters 1st fill oloroso sherry cask

12,05 % is 4,91 years (old) unpeated whisky from 250-liters 1st filloloroso sherry cask , finished since 9th of jan 2015 in 55-liters 1st fill oloroso sherry cask .

8,53 % is 4,73 years (old) peated whisky (43 ppm) from 115-liters 1st fill olorosofat.oloroso sherry cask

The 2nd Step Collection 01 has been neither chill-filtered nor coloured.


Yeast: Fermentis Safwhisky M-1

Unpeated malt: pilsen malt from Vikingmalt in Halmstad Sweden.

Peated malt: From Castle Maltings n Belgien.
Smoked to a phenol level of 43 ppm using Scottish peat

Ingoing barley varieties: Tipple, Quench, Publican, Henley and Sebastian

Process water: From the Bålsjön lake, filtered through sand and coal filters.

Cooling Water: From the Ångerman River

Ingoing batches: 40B-55B, 75A-103B, 124A-129A, 135B-165A

Batch size: 1.2 tonnes of malt

Average fermenting time: 80 hours in stainless steel washbacks.

Distilled between 18th of March 2011 and the 3d of November 2011.

First cut of the run

Peated recipe: 30 minutes (forshots)

Second cut of the run

Unpeated recipe 67 % ABV (20°C)
Peated recipe: 60 % ABV (20°C)

Ingoing casks

The bourbon casks has in the beginning matured Jack Daniels whiskey.
The 115 liters sherry cask is remade from old sherry butts by Thorslundkagge.
The 55 and 250 liters sherry casks is made in spain.

The casks have been stored in a damp warehouse up until October 2014, reducing the alcohol levels. Between October 2014 and November 2016 the casks were stored in a drier environment in Box warehouse No. 3.

On the 18th of August 2016 2007 kg whisky with an average alcohol level of 59,39 % was emptied into a vatting tank.

Alcohol level was adjusted to the predetermined level of 51,2% prior bottling.

The 2nd Step Collection 02 was bottled between the 22nd of August and the 23rd of August 2016, producing a batch of 5096 bottles.

We recommend letting The 2nd Step Collection 01 breathe for a short time in the glass before drinking. Feel free to add a few drops of water in order to enhance and bring the whisky’s aroma to life.
