The 2nd Step Collection 03
The third and last edition in The 2nd Step Collection is a peaty vatting of bourbon casks and casks of American and Hungarian virgin oak. It is a whisky in classic Islay style with a spicy edge of virgin oak, mainly American (Quercus alba). The average age is 5.5 years.

8.7 % is 5.51 years old peated whisky from 135-litres 1st fill bourbon casks.
4.8 % is 5.22 years old unpeated whisky from 85-litres medium toasted American virgin Oak.
4.9 % is 5.2 years old unpeated whisky finished for 25 months in 96-litre charred American oak.
2.4 % is 5.84 years old peated whisky finished for 25 months in 96-litres charred American oak.
7.3 % is 5.25 years old peated whisky finished for 25 months in 96-litres hard toasted American oak.
2.3 % is 5.34 years old peated whisky from 55-litres medium toasted Hungarian virgin oak.
2.4 % is 5.34 years old unpeated whisky from 55-litres medium toasted Hungarian virgin oak.
The 2nd Step Collection 03 is neither chill-filtered nor coloured.
Yeast: Fermentis Safwhisky M-1
Unpeated Malt: Pilsen Malt from Vikingmalt in Halmstad/Sweden.
Peated malt: From Castle Maltings in Belgium. Dried using Scottish peat to a phenol content of 31,39, 43 and 45 ppm.
Ingoing barley varieties: Tipple, Quench, Publican, Henley and Sebastian.
Process water: From the Bålsjön lake, filtered through sand and coal filters.
Cooling water: From the Ångerman river
Ingoing batches: 18B–27B, 56A–65A, 109A–113A, 124B, 135B–142B, 146A–164A, 173A–181B
Batch size: 1.2 tonnes of malt
Average fermenting time: 80 hours in stainless steel washbacks.
Distilled between 2nd of March 2011 and 8th of December 2011

The 200-litres Bourbon casks are made in Kentucky.
The 110- and 135-litres Bourbon casks are remade Bourbon barrels from Speyside Cooperage in Scotland.
The casks of American virgin oak are made of Kelvin Cooperage in USA.
The casks of Hungarian oak are made in Hungary.
The casks have been stored in a damp warehouse up until October 2014, reducing the alcohol strength. From October 2014 to August 2016 the casks were stored in a drier environment in Box warehouse No. 3.
On the 24th of February 2017 3 266 kg whisky with an average alcohol strength of 59.71 % was emptied into a vatting tank.
Alcohol level was adjusted to the predetermined level of 51.3% prior bottling.
