Dálvve Batch 01

THE 7TH OF NOVEMBER 2016 REPRESENTS A MILESTONE in the history of the box distillery. It was on this date the first whisky from our core range was launched. It is our intention to produce and sell dálvve in several markets across the world for the foreseeable future. dálvve is our signature malt, a semi-peated whisky that spent its last period of maturation in bourbon casks for five years. dálvve is a word from the ancient language of the Sami people of northern Sweden. It means winter – and by using it, we want to emphasise the changing of the seasons, our unique northerly location and the temperature variations that have such a profound influence on the maturation of our whisky

RECIPE

63.48% is 5.24 year old unpeated whisky from
200-litre 1st fill bourbon cask.
24.13% is 5.23 year old peated whisky from
200-litre 1st fill bourbon cask.
12.39% is 5.07 year old unpeated whisky from
135-litre 1st fill bourbon cask.
dálvve is neither cold-filtered nor has colouring been added.

INGREDIENTS

Yeast: Fermentis Safwhisky M-1
Unpeated malt: Pilsner malt from Vikingmalt in Halmstad, Sweden.
Peated malt: Pilsner malt from Castle Maltings in Belgium.
Peated to 39ppm phenol content using Scottish peat.
Ingoing barley: Tipple, Quench, Publican, Henley and
Sebastian.
Process water: From Bålsjön Lake, filtered through sand and coal filters.
Cooling water: From the Ångerman River.
Ingoing batches: 27B, 40B–102B, 104A–104B, 129B–138A
Batch size: 1.2 tonnes of malt
Average fermenting time: 80 hours in stainless steel vats.
Distilled between 2nd May 2011 and 27th September 2011.

First cut of the run:
Unpeated recipe: 13 minutes head (foreshots)
Peated recipe: 30 minutes head (foreshots)

Second cut of the run:
Unpeated recipe: 67% ABV (20°C)
Peated recipe: 60% ABV (20°C)

INGOING CASK

Bourbon cask, 200-litre (barrels) delivered almost exclusively from Heaven Hill and Jack Daniels.
135-litre bourbon casks (quarter casks) are re-built from bourbon barrels by Speyside Cooperage.
Up until October 2014, the casks were stored in a damp warehouse and lost some of their alcoholic strength. From October 2014 to August 2016 they were stored in a drier environment in box warehouse number 3.
On the 24th of October 2016, 6 986kg of whisky with an average alcohol content of 59.54% were emptied into a blending vat.
Alcohol content was adjusted to a pre-determined 46% at the time of bottling.
dálvve was bottled between the 28th of October and 3rd of November 2016 in a series of 14 015 bottles.
We recommend allowing dálvve to breathe in the glass for a while before enjoying. Feel free to add a couple of drops of water to release the aromas in the whisky.

Dálvve Batch 02

Box Dálvve is the first whisky of our future core range. It´s a consistent, on-going product that will be present on both domestic and international markets for the coming years. Box Dálvve is bottled in batches and every expression will be slightly different even if style and recipe are the same. The Second Batch of Dálvve is a semi peated whisky 100 % matured on full sized bourbon barrels and bourbon quarter casks.

20 % is 5.12 years old peated whisky from 200-litres 1st fill bourbon casks

80 % is 4.99 years old unpeated whisky from 135-litres 1st fill bourbon casks
Ingoing barley varieties: Tipple, Quench, Publican, Henley and Sebastian.

Process water: From the Bålsjön lake, filtered through sand and coal filters.

Cooling water: From the Ångerman river

Ingoing batches: Peated 124B, 146A-157B: Unpeated 135B-145B, 165A-169B, 173A-183B

Batch size: 1.2 tonnes of malt

Average fermenting time: 80 hours in stainless steel washbacks.

Distilled between 2011-10-10 and 2011-12-13

Peated recipe: 30 minutes (foreshots)

Second cut of the run

 

Unpeated recipe: 67 % ABV (20°C)
Peated recipe: 60 % ABV (20°C)

 

Ingoing casks

 

In total there are whisky from 70 casks in Dálvve Batch 02

The bourbon barrels (200 litres) was mainly delivered from Heaven Hill and Jack Daniels.

The bourbon casks (135 litres) are remade from bourbon barrels by Speyside Cooperage in Scotland,

The casks have been stored in a damp warehouse up until October 2014, reducing the alcohol strength. From October 2014 to August 2016 the casks were stored in a drier environment in Box warehouse No. 3.

On the 8th­­ ­– 9th of  December 2016 7 069 kg whisky with an average alcohol strength of 59,46 % was emptied into a vatting tank to marrying the cold winter spirit and increase the temperature before bottling

Alcohol strength was adjusted to predetermined 46 % ABV prior bottling.

Dálvve was bottled 2016-12-12 to 2016-12-15 in an amount of 14 208 btls.

We recommend letting Dálvve breathe for a short time in the glass before drinking. Feel free to add a few drops of water in order to enhance and bring the whisky’s aroma to life.
