Whisky is always stored in oak casks and must be matured for at least 3 years to be called whisky. At Box, we use both Bourbon and Oloroso sherry casks. Casks can hold up to 700 litres but the smaller the cask, the quicker the oak affects flavour and gives the whisky its character. Our standard cask is teethe 200 litre bourbon barrel and the larger sherry butt. But we have quite a collection of special cask in our warehouses to. We use 39,25 litre casks – a traditional Swedish size we call ‘Ankare’ for our customers private casks. We find that this size is ideal as it gives a relatively quick maturation period but isn’t so small that there is a risk the product matures so early that it can’t be called whisky. Our cask owners can be 100% sure we only use casks of the highest quality.
